These Florentines are very easy to make and delicious, they are a great source of fibre and protein and are low in sugar, so they make a great satisfying nibble when you need one.

Ingredients:

200g Te Atatu Toasted Paleo Blend muesli

White of 1 egg

1 tablespoon rice bran syrup

80g dark chocolate broken into bits

1 teaspoon coconut oil

 

Method:

Melt the chocolate and coconut oil together, I do this with 20 seconds in the microwave then stir and repeat until all melted, and place aside.

In a bowl, place muesli, the egg white, the rice bran syrup - tip, if you warm the syrup a little, it will be more runny and easier to work with. Mix well together.

Turn the oven on to 180 degrees celsius

In a 12 portion mini muffin tray, spoon the chocolate evenly between the 12 portions, then spoon the muesli mix evenly on top of the chocolate and press down with the back of a spoon.

Bake for 10 minutes, cool in the muffin tray on a rack until completely cool. If you remove from the tray while still warm, some of the chocolate may stay in the tray.

Store in an airtight container.
