Turn the oven to to 180C. In a bowl mix the eggs and coconut oil, in another larger bowl mix the grain free porridge, salt, baking powder and coconut sugar. Then add the wet ingredients to the dry ingredients and mix well, then finally add the grated carrot.
Pour the mix into a greased loaf tin and cook for 30 minutes and check with a skewer if it comes out clean - its done - if not, cook for another 5 minutes and check.
Icing - In this photo, I have iced the cake with cream cheese icing. To make it a little more healthy, you could swap the white icing sugar for coconut icing sugar or you could top with your favourite coconut yoghurt for a really healthy and dairy free option.
