Breakfast Custards V2

an easy high-fibre, high-protein, low-sugar and low-salt breakfast recipe

I created this recipe 3 years ago and it’s still one of my favourite go-to breakfasts. It tastes like an indulgentpudding, but it is actually a low-sugar, high-fibre, high-protein breakfast.

In the last three years, I have fine-tuned the method, to make it a lot easier, so I thought I would share again. You will also find some more tips in the recipe online.

Ingredients:

1/3 cup (a portion cup) of any muesli blend in the Te Atatū Toasted range

1 cup of your choice of milk

1 egg

1 tablespoon of maple syrup, or your choice of sweetener (optional)

1/2 teaspoon of vanilla essence (optional)

Method:

You will need a microwavable breakfast bowl that is large enough to hold all the above ingredients.

In the bowl, place the egg and whisk well with a fork, add 1/3 cup milk, whisk again, add the muesli, the syrup, the vanilla if adding and whisk well again, then add the rest of the milk, whisk again, so it is fully mixed.

Carefully place in the microwave and microwave on 50% (higher than this will cause it to overflow) for 3 minutes, check and then microwave for a further 3 minutes at 50%.

Leave to cool and place in the fridge until completely cool and when ready to eat,

remove from the fridge and top with yoghurt and your choice of fruit.
