This meat loaf turned out delicious and shows what you can do with what you have so you don't have to go to the supermarket.
My usual meat loaf recipe has oats in it, but I didn't have any but I do have muesli!! The great thing about the muesli is that it also has other seeds and grains in and they worked perfectly as an addition. So here is the lockdown recipe.
Note: A portion spoon - which comes free with your first muesli order is 1/3 cup.
handful of herbs - I used Italian parsley but thyme or oregano would be good too.
Wash and cook the lentils for 25minutes until just cooked.
In a whizz place the muesli and onion and blitz until well broken up. Add everything else except the mince into the whizz and mix. You can finally add the mince and lightly whizz until just mixed or you can tip the whizz mix out into a bowl and add the mince and mix by hand. You will get more texture if you mix the mince in by hand.
Now place the mix in a greased loaf tin and place in the fridge to set for at least 1 hour.
Pre heat the oven to 180 degrees gently remove the loaf from the tin (I scored around the edge with a knife so came out evenly) and place in a baking dish. Cook for 30 minutes and then remove from the oven drizzle a few spoonfuls of tomato sauce over the top and sprinkle about 1/2 cup of grated cheese over and cook for a further 15 minutes.
That's your meat loaf ready and it will be delicious!!
