Healthy gluten-free snacks made with our Gluten Free cereal blend



1 Cup toasted almonds

125g butter

2 Cups Te Atatu Toasted Gluten Free Blend Muesli

1/2 can of condensed milk

1 Cup shredded coconut

2 tsp Ground Ginger


2 Cups Icing Sugar

80g Butter

2 Tbsp Golden Syrup

2 tsp Ground Ginger

2Tbsp Hot water



Blitz the toasted almonds, put half in a bowl and add the muesli, coconut and ginger. Mix.

In a saucepan, melt the butter, then add the condensed milk, and then the mixed dry ingredients. Stir together well.

Take off the heat and press the mixture into a greased square dish (approx 20 x 20cm), refrigerate.


Melt the butter then add the rest of the ingredients and whisk smooth with a knife, spread evenly over the base and then sprinkle the remaining 1/2 Cup of blitzed almonds over the top.

Refrigerate again and cut into squares when cooled. It is very decadent, so the squares don't need to be very large!

To make this more festive you can use Pistachios instead of almonds.

Note: If you make this in a gluten environment (such as most home kitchens), wash down all contact surfaces and utensils before using them to minimise the contamination of gluten.
