Scrummy Te Atatu Toasted Anzac Biscuits August 20 2014
3 tbsp golden syrup
150g Te Atatu Toasted Original Blend Muesli
40g thread coconut
160g plain flour
100g brown sugar
1 tsp baking soda
2 tbsp boiling water
Place butter and golden syrup in a saucepan and melt. Place all other ingredients – except baking soda in a large bowl. Place baking soda in a bowl and add the hot water and dissolve, add this to the melted golden syrup and butter mixture, then add this to the dry ingredients and mix well. Place rolled balls of the mixture about walnut size on a greased tray. (if mix is a bit crumbly just squeeze into balls) and flatten slightly with a fork, then cook @ 1800C fanbake for 10 minutes - until golden. Let cool before moving them.
Once they are cool, dip in melted chocolate to make them extra special.
