These are delicious!! They are a great healthy treat and so easy to make, perfect for lunchboxes or to make for a friend, besides being gluten free, the slice is dairy free, refined sugar free and nut free.
½ Cup sultanas (or any other diced up dried fruit)
½ Cup tahini paste
½ Cup honey
3T coconut oil
1/2 t agar agar powder * (optional)
½ Cup pumpkin seeds (optional)
In a mixing bowl combine the muesli and sultanas. In a saucepan, put the tahini paste, honey, coconut oil and agar agar and stir while melting, then let it bubble, keep stirring quickly so it doesn’t burn and take it off the heat just before it caramelises (about 2 minutes). This will give the slice a lovely flavour and help it set better. Pour it into the muesli and sultana mix and mix well, then tip into a greased dish approx 22cmx22cm and press into place. Place it in the fridge to cool then cut into squares 4x4 for 16 or for bite size smaller 7x7 for 49 pieces. Keep in a cool place. Enjoy!
Adding the agar agar powder allows you to keep at room temperature, if you do not use the agar agar powder just remember to store the slice in the fridge before eating. You wont need to put it back in the fridge .............because it will be all eaten!!
