These are low sugar and a light sprinkle of brown sugar on top just before baking makes them taste sweeter than they are, but really they are a lot healthier than a lot of other options.
Ingredients:
1 cup unsweetened apple sauce
1/2 cup milk
1 egg
1 teaspoon vanilla
50g butter or coconut oil, melted
1 cup Te Atatu Toasted Healthy Blend muesli
3/4 cup whole meal flour
1/3 cup coconut or brown sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
Pinch of salt
coconut or brown sugar for sprinkling on top (about 1/2 teaspoon per muffin)
Method:
Preheat the oven to 190 fanbake, line a 12 cup muffin tin with liners or grease muffin cups.
In a medium bowl whisk together apple sauce, milk, egg, vanilla essence, butter and muesli, set aside.
In a large bowl, mix together flour, brown sugar, baking soda, baking powder and salt. Make a well in the middle and pour in the wet mixture.
Fold the wet mixture in until just blended.
Distribute between 12 muffin cups, sprinkle with brown sugar and bake for 18 minutes until just cooked, don’t over cook or they will be a bit dry.
Cool on a rack before placing in an airtight container or place in an empty 1.5kg muesli bag and freeze, so you can bring out as needed.
