These little cups have style and filling them with yoghurt and fresh berries will give them the wow factor anddeliciousness without all the calories - perfect for this time of the year!

Ingredients:

Cups

1/4c runny honey

1/4c butter (or coconut oil), softened 

1 banana, mashed

1t vanilla

1c oats, either rolled or whole grain.

1c Te Atatu Toasted Healthy blend muesli

Filling

1 1/4c yoghurt (any type)

Fresh fruit and cinnamon to serve 

Method

  1. Preheat the oven to 180°C and lightly grease a 12-cup muffin tray. Set aside. 
  2. Combine the honey, butter, banana and vanilla in a large bowl. 
  3. Blitz the oats in a blender until it becomes a fine flour consistency. Add the muesli and pulse 4-5 times until any almonds are broken down a little more. 
  4. Mix the dry ingredients into the wet mixture. 
  5. Distribute 2 tablespoons into 10 the muffin cases. Press the base and sides with your fingers until they are around 5mm thick all over. 
  6. Bake in the oven for 12-15 minutes or starting to brown around the edges. 
  7. Remove from the oven and allow to cool completely before removing. 
  8. Fill with yoghurt and top with chopped fruit and a light dusting of cinnamon.
