‘Tis the season of berries and there are lots around but sometimes we end up with overripe berries.
Here’s an easy compote you can make with them. You can also make this compote from frozen berries – it will just take a little longer and don’t forget to watch the saucepan so the berries do not burn.
Ingredients:
2 Cups berries – I have used strawberries in this recipe but use whatever berries you have
1 Tablespoon water
2 Tablespoons chia seeds
1 Tablespoon lemon juice
1 Tablespoon of honey or maple syrup
Method:
Place the berries and the tablespoon of water in a saucepan on a low heat, put the lid on top and cook gently until they collapse – about 5 minutes.
Mash with a fork or potato masher until they are your desired consistency, add the chia seeds, lemon juice and sweetener. You may want to add more or less sweetener to suit your taste.
Let it cool in the saucepan for 5 minutes, it will thicken up in this time and then transfer to an airtight container.
I enjoy this in a layered breakfast, with muesli and Greek yoghurt. In this recipe, I have used the Healthy Blend, but you could use any of our cereals.
The berry jam will keep for up to 2 weeks in the fridge.
