Summer is here, perfect timing for these delicious sandwiches!
INGREDIENTS
250g dark chocolate
2teaspoons coconut oil
2cups Te Atatu Toasted Coco Crunchies
Vanilla ice cream slices (Tiptop does the perfect size pre cut)
Berry coulis, to serve (optional)
METHOD
1. Prepare two baking trays with backing paper. Keep the paper within the lips of the tray to ensure it is flat.
2. Place a bowl on top of a saucepan of boiling water and gently melt the chocolate and coconut oil together (the bowl needs to be larger than the top of the saucepan).
3. Once completely melted, pour in the Coco Crunchies and gently stir to combine.
4. Pour the mixture evenly over the prepared trays and spread with the back of a spoon to form rectangles. It should be about 3mm thick. Place on shelves in the fridge for atleast an hour to set.
5. Remove from the fridge and use a knife warmed in hot water (but dried) to slice into rectangles roughly the size of the ice cream slices.
6. Sandwich the ice cream slices between two shards and refrigerate for another 10 minutes before serving. Drizzle with berry coulis (optional).
