These are delicious for breakfast or anytime of the day. Adding our Original Blend muesli makes them a great source of fibre and protein.

Ingredients 

2 cups flour

1 cups Te Atatu Toasted Original Blend muesli 

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon  ground ginger

1 cup milk 

3/4 cup applesauce

3/4 ccup coconut sugar 

1/3 cup coconut oil, melted

1 egg

2 teaspoon vanilla extract

1 1/2 cups carrot, grated

1/2 cup desiccated coconut

1 cup fresh pineapple, cut into 1cm cubes and placed on some handy towels to absorb moisture 

Method 

  1. Preheat oven to 180°C. Place cupcake wrappers in a 12 cup muffin pan.
  2. In a large bowl, whisk together the flour, muesli, baking powder, baking soda, salt, cinnamon, and ginger.
  3. In a separate bowl, whisk together the milk, applesauce, coconut sugar,  oil, egg, and vanilla extract.
  4. Mix the wet ingredients with the dry and whisk until all ingredients are just mixed. Gently stir in the carrots, coconut, and pineapple.
  5. Distribute the mixture between the muffin cups.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool for 10 minutes before removing from the muffin tin.
  8. Store in an airtight container at room temperature for up to 3 days, or freeze.
