Mint, chocolate and crunch, such a yummy combo and this slice is so good! Thank you Shelley for another yummy recipe!
Base
1 cup of flour
2/3 cup of caster sugar
1 cup of desiccated coconut
3 tbsp of cacao powder (or cocoa)
150g of butter, melted
1/2 tsp peppermint essence
Mint layer
2 1/2 cups of icing sugar
4 tbsp boiling water
1/2 tsp peppermint essence
1-2 drops green food colouring (optional)
Chocolate crunch layer
2 cups @teatatutoasted Coco Crunchies
250g @whittakersnz Dark Ghana
Heat the oven to bake 180 and line a 20cm tin with baking paper.
In a large bowl mix together the base ingredients. Press evenly into the prepared tin and bake for 20mins.
While the base is still warm mix together the peppermint layer and pour over the base.
Spread out evenly with a small spatula or back of a spoon.
Refrigerate for 1 hour until it is set.
Melt the chocolate and add the Coco Crunchies. Mix together combine and then pour over the peppermint layer. Refrigerate for another hour or until set.
Cut into squares and enjoy!
