These homemade crackers are a simple, wholesome alternative to shop-bought ones and are easy to make.
Crisp and delicious, they’re perfect with dips, cheese, or as an afternoon snack with nut butter. Naturally gluten free and nut free, they’re a great pantry staple.
Ingredients:
2/3 cup Te Atatu Toasted Gluten Free Muesli
2/3 cup gluten free flour (I used Edmonds)
1 teaspoon salt
4 tablespoons olive oil
½ cup hot water
Flaky sea salt (or your favourite herb) to sprinkle on top
Method:
1.Preheat the oven to 160°C. Line 2 baking trays with baking paper and cut a third sheet the same size; set aside.
2.In a food processor, blitz the muesli until it resembles coarse breadcrumbs. Add the flour and salt and pulse to combine.
3.Add the olive oil and hot water and mix until you have a soft, slightly wet dough.
4.Divide the dough evenly between the two trays. Place the extra sheet of baking paper on top of one tray and press the dough out with your hands, then finish with a rolling pin to spread it very thin across the tray.
5.Peel off the top paper and repeat with the second tray.
6.Score the dough with a knife into cracker-sized pieces and sprinkle with flaky sea salt.
7.Bake for 20 minutes, or until golden and crisp.
8.Cool, break into pieces, and store in an airtight container.
