I love the texture of this bread, you will need a few kitchen gadgets and time to let it prove, everything else is easy and you will end up with a beautiful loaf of bread.
Ingredients:
350 ml warm water
1 teaspoon honey
1 teaspoon yeast granules
225g plain high grade flour
225g Te Atatu Toasted Healthy Blend muesli blitzed*
1 teaspoon salt
1 tablespoon olive oil
Method:
To activate the yeast, mix the honey and warm water together until the honey is dissolved, sprinkle the yeast ontop and set aside until it froths.
In a mixer with a dough hook, place the flour, blitzed muesli, teaspoon of salt and olive oil.
Add the yeast mix and knead for 8 minutes. You will have quite a wet, stretchy mix. Transfer into a greased bread tin*
Cover and leave in the fridge overnight, remove and put somewhere warm, (hot water cupboard or sun) for 90 minutes).
Heat the oven to 220 degrees fan bake, place in the oven and cook for 20 minutes, reduce the oven to 180 degrees and cook for another 40 minutes. Remove from the oven let it cool slightly and turn out of the tin.
Cool and slice. Delicious!!
* In my food processor, I blitz 2 or 3 measures (225g) of Healthy Blend Muesli, and place back in the bag and seal. Then I have enough for another couple of loaves. I blitz it to the consistency of fine bread crumbs, but over time you will decide the consistency that works for you.
