8 tinned peaches (or 1 x 400g can), drained and cut into chunks

Line the base and sides of a 21cm loose bottom or springform cake pan.
Blitz the muesli in a food processor until it is a grainy consistency. You can leave it chunkier if you prefer. Stir through the butter.
Press the mixture in the base of the prepared pan and chill in the fridge.
Whip the cream with a beater or stand mixer until the peaks hold.
In a separate bowl beat the cream cheese and sugar until smooth. Add the icing sugar and beat for another minute before adding the vanilla and sour cream. Beat until completely smooth, scraping down with a spatula several times.
Using a spatula, fold the chopped peaches through first and then gently fold the whipped cream through the mixture. Be careful not to overmix as it deflates the cream.
Pour the mixture over the base and smooth the surface with the spatula.
Chill overnight. No cheating as you’ll end up with a deflated dessert.
Remove from the pan and top with the lemon curd before serving.
