These are divine, they are a very low sugar dessert option and the perfect dessert for someone following the Keto diet, the coconut is perfectly paired with the peach and passionfruit. 



1 270ml can of Ayam coconut cream

1 270ml milk of your choice (just fill up the emptied Ayam can)

1 tsp gelatin powder - soaked in 1 tbs water

1 tsp vanilla paste

1 cup Te Atatu Toasted Peach and Passionfruit Paleo



On a baking tray, place the cup of paleo muesli and toast for about 10 minutes at 180 degrees, take care not to burn.

In a pot place the coconut cream, milk and bring to the boil, then stir in the soaked gelatin and vanilla paste, continue to stir so well mixed (I use a whisk). Add half the toasted muesli, give it a good stir and let it seep for a few minutes. Strain through a coarse muslin cloth, and pour into greased ramekins.

Cool and transfer to the fridge for a few hours to set.

Turn out from the ramekin onto a plate and decorate with the remainder of toasted muesli and a little cream of you like.
