This cobbler topping is delicious, I have made it with peaches for the base as it makes such a delicious combination. The sprinkle of the Peach and Passionfruit Paleo muesli on top adds a lovely flavour and texture.
Base:
Place 2 400g tinnes of peached (or equivalent ) in a 20cm round dish
Topping:
1 cup almond meal
1 cup tapicoa flour
2 teaspoons baking powder
2 tablespoons coconut sugar
1 teaspoon vanilla
1/3 cup milk
1/3 cup coconut oil melted
1 cup of Peach and Passionfruit Paleo muesli
Combine all ingredients except the muesli in a whizz and blend until a mixed batter.
Spoon dollops of the batter over the peaches and then sprinkle the muesli on top. Cook for 20 minutes.
Serve with cream, ice cream or yoghurt. Enjoy!
