This is a scrumptious crumble in an emergency or if you suddenly decide you want dessert. It's super simple and it is also a healthy dessert option.
It will take you less than 5 minutes to prepare and then another 25 to cook.
Ingredients and Method:
Crumble topping
2 Cups Te Atatu Toasted Original Blend Muesli
100g butter chopped into cm cubes
1/4 Cup coconut sugar (or you could use soft brown sugar)
Fruit mix
1 x 750 can of apple slices in juice (sometimes called pie mix)
1/2 Cup sultanas
1 Cup frozen blackberries
Method:
Put your oven on to 180 degrees fan bake.
Put 1 cup of the original blend muesli in a wizz and blitz until almost bread crumb consistency, then add the sugar and the butter cubes and blitz until well mixed, it will get a bit think and lumpy and that is fine, then add the second cup of muesli and just give a quick blitz to mix
In a loaf tin (14cm x 24cm ish) spread out the apple, sprinkle the sultanas over and mix to evenly dispersed, then sprinkle the frozen berries over the top.
Evenly sprinkle/spoon the muesli topping mix over the top and place in the oven, cook for 25 minutes, check that the top is cooked and remove. Set aside to cool either slightly or completely. Personally I like crumble a little warm but this would also be delicious as cold left overs for breakfast.
Serve with thick plain yoghurt or vanilla icecream - your choice :) .
Note: I keep these ingredients in the pantry and freezer so I am ready to go at a moments notice. It's a handy dessert for unplanned occasions!.
