Delicious Paleo breakfast idea: this is almost as much fun to make as it is to eat!

This recipe serves 1 and can easily be doubled or tripled as required.

Ingredients and Method:

 For the Paleo Porridge:

1 portion spoon1 Te Atatu Toasted Peach and Passion fruit Paleo Muesli

1 teaspoon chia seeds

1 portion spoon milk (almond, coconut or dairy)

 Method: Mix all together in a small pot and leave to soak for 15 minutes

Cook on the stoves top until it has thickened and is bubbling – approximately 2 minutes, stir it while it is cooking so it does not stick.

 For the Caramelised bananas:

2 tablespoons honey

1 tablespoon coconut oil or butter (butter will caramelise better)

1 banana peeled and cut lengthwise

Method: Melt the honey and oil or butter in a pan, when it starts to bubble add the banana and cook, drizzle the liquid over as it cooks. Cook for 1 minute and then turn the banana slices over and cook for a further minute or 2 if you like them really caramalised.

To assemble – put the porridge into a bowl, place the caramelised banana on top, add a dollop of coconut yoghurt and drizzle the pan juices over.
