I have been having this healthy breakfast for the last couple of mornings and it’s so good, so I thought I should add it to the recipe repertoire – it's super easy, nutritious, delicious and filling – so perfect to start the morning. There is also a very interesting ingredient in here too.

Here’s the recipe:

This recipe serves 1 and can easily be doubled or tripled as required.

Ingredients and Method:

 For the Porridge:

1 portion spoon1 Te Atatu Toasted Peach and Passionfruit Paleo Blend Muesli

2 teaspoons of Basil Seeds or Chia Seeds

½ Cup water or milk if you prefer

Method: Mix all together in a small pot and leave to soak 10 or so minutes, then cook on the until it has thickened and is bubbling, stir occasionally while it is cooking so it does not stick.

Pour into your favourite bowl and sprinkle with toppings – yoghurt, fresh fruit, stewed fruit, whatever you like. In this picture, I have sprinkled with blueberries and freeze-dried strawberry slices.

Enjoy! This will keep you going till morning tea or even lunchtime.
