My sister regularly makes this - it is sooo yummy and easy and everyone in her family loves it, even the health suspicious!
500 g raw beetroot, peeled and grated 700g carrot, peeled and grated 1 cup fresh mint leaves, roughly chopped ½ C raisins ½ Cup Te Atatu Toasted Gluten Free muesli ½ teaspoon salt DRESSING 2 T pomegranate molasses (preferred) or honey 2 T balsamic vinegar ¼ C orange juice ¼ C Olive oil 1T honey DRESSING: place all the ingredients in a jar with a tight lid. shake well to combine. SALAD: in a large bowl combine all ingredients. When ready to serve mix dressing in and gently toss again. ENJOY!
