OK ......I'm going to start this by saying I have a-maz-ing customers!!

They send me lovely messages, photos and fabulous recipes and this is one of them - Thank you Jacqui!

When Jacqui emailed me the recipe - I couldn't wait try - it seemed so easy and I love pikelets! I gobbled the first plateful before I could take a photo (and they were delicious) lucky I made plenty. Here is the recipe.

Ingredients: 

½ Cup Grain Free Porridge

1 Banana

2 Eggs

½ Teaspoon Baking Powder

Method:

Mix the 4 ingredients together (in a whizz or blender is best), let is rest for half an hour ideally then place spoonfills of the mixture on to a hot, lightly greased fry pan. When they bubble on top turn over and cook the second side until done.

Serve with your favourite toppings. I had mine with plain Greek yoghurt, blueberries and a drizzle of rice bran syrup. Enjoy!

This makes about 8 pikelets.
