These look spectacular, taste delicious and are easy to make.
Here's the recipe:
* 1 cup Te Atatu Toasted Gluten Free Muesli
* 1/2 cup Te Atatu Toasted Gluten Free Porridge
* 1/3 cup almonds, chopped
* 1/3 cup honey
* 1 tbsp coconut oil, melted
* Pinch of sea salt
Preheat oven to 180°C fan bake. Line a 20x20cm baking dish with parchment paper. Combine all dry ingredients in a large bowl. In a separate bowl, mix together honey and coconut oil. Pour liquid over dry ingredients and stir until completely coated. Place the mix in the baking dish and press down evenly and firmly. Bake for 20 minutes or until golden brown. Let it cool slightly before spreading chocolate.
* 200g dark chocolate
* 1 tbsp coconut oil
* 1 tbsp goji berries
* 1 tbsp pistachios, chopped
* 1 tbsp pumpkin seeds
* 1 tbsp cocoa nibs ( I used Ola Pacifica)
* Pinch of rock salt
Melt chocolate and coconut oil in bowl over hot water or in short blasts in the microwave. Spread evenly over the base. Sprinkle all toppings. Refrigerate till set and then cut into bars your desired size .
