My weakness is cheesecake and my uber weakness is baked cheesecake.

I do love crumble too > so this is what happens when you mix the two! Luckily there are a few tricks to make it lower in sugar and fat and still tasted delicious - perfect!


For the topping:

1 cup of Healthy Blend muesli

3 tablespoons of coconut sugar

2 tablespoons of butter

1 cup of frozen raspberries or blueberries or a mix

Place the Healthy Blend, coconut sugar and butter in a whizz and blitz to a coarse crumble, put aside.

For the filling:

200g cottage cheese

250g light cream cheese

2 tsp finely grated lemon

3/4 cup caster sugar (you can use replace with coconut sugar and it will still taste delicious but the filling will be brown!)

2 large eggs

1/2 cup fine semolina

1/4 cup self-raising flour

1/4 cup milk with a tsp of lemon juice added.

Preheat the oven to 160 or 140 fan-forced and grease 20cm tin.

In a kitchen whizz or with an electric mixer beat cheeses together until smooth, then add eggs one at a time. Then add the semolina, the sifted flour and finally the milk mix.

Place the greased tin on an oven tray and fill it with the mix. Bale for 30 minutes remove from the oven and spoon the crumble mix over the top. then sprinkle the frozen berries over the top. Cook for a further 30 minutes.

Turn the oven off, open the door and leave in the oven to cool for an our, remove and put it in the fridge for atleast 3 hours or overnight.

Cut into slices and enjoy with a dollop of thick Greek yogurt.
