This is a yummy breakfast using chia seeds. Making it in the jar is handy if you want to take breakfast (or a snack) with you, but you could also make it in a bowl. For this recipe, I have used coconut milk to keep the recipe as a vegan option, it also makes it lovely and creamy. But you can use whatever milk you like.
Ingredients for the base:
2 tablespoons chia seeds
½ cup coconut milk (or milk of your choice)
1 teaspoon maple syrup (or sweetener of your choice)
Ingredients for the topping the next day:
⅓ cupTe Atatu Toasted Paleo Blend Muesli
100g drained tinned (in fruit juice) peaches
1 tablespoon passionfruit pulp
Method:
Place chia seeds, coconut milk and maple syrup in a jar and stir well until fully mixed. I then stir again 10 minutes later to remove any clumping. Place overnight in the fridge.
Next morning, blend the peaches and passionfruit together and set aside.
Add the muesli to the jar, then place the peaches and passionfruit mix on top.
Serves 1
