It’s been on my mind for a while to make a savoury porridge.

Soaking the muesli overnight softens it and makes a lovely consistency and chicken stock seems to give the best flavour, give it a try.

 

Ingredients:

 

Soak overnight

1/3 cup Te Atatu Toasted Healthy Blend Muesli

1/3 cup water

 

Next day

½ tablespoon butter - approx

1 small clove garlic, peeled and chopped up

2 button mushrooms sliced

2 tablespoons frozen corn

½ tablespoon stock concentrate *we used Simon Gault’s chicken stock

½ cup water

 

Method:

Sauté the chopped garlic and sliced mushrooms in a pan until soft, add the frozen corn and lightly stir, add the undrained soaked oats, stir then add the stock concentrate and water. Cook until it has thickened – approx. 5 minutes.

Pour into a breakfast bowl and let it cool a little before topping it with sliced spring onions or herbs. You could also top it with fried onions, left over chicken or left over chopped up roast vegies.
