These remind me of the bars we used to buy as kids, happy days!

INGREDIENTS

300g Te Atatu Toasted Original blend

40g desiccated coconut

200g dried apricots + 45g extra, chopped

60g butter, melted

1T almond butter

1/2t sea salt

2T water

80g dark chocolate, chopped

METHOD

  • Pour 1 cup of boiling water over the 200g of apricots and set aside for 10 minutes.
  • Place the muesli and coconut in a high speed blender and pulse until nearly the texture of flour.
  • Drain the apricots and add them along with the melted butter, almond butter, salt and water.
  • Blend until well combined and a dough forms. It needs to form a dough or it will be too dry.
  • Transfer to a bowl and stir through the extra apricots and chocolate.
  • Press mixture evenly into a lined baking tray (20x20cm) and refrigerate for at least 2 hours.
  • Slice into 12 portions (or your desired size)and store in a sealed container in the fridge.
