With school back this week, it's good to have something delicious for the lunchbox or as an afterschool snack ready when they wearily return home with full brains. This rocky road is perfect!

Ingredients 

2T butter or coconut oil 

2 1/2c mini baking marshmallows + 1/2 cup marshmallows

2 1/2c coco crunchies 

3/4c dark chocolate melts

1/2c walnuts, chopped

1/2c dried apricots, chopped

Method 

  1. Melt the butter in a medium saucepan over a medium heat. Add the 21/2 cups of marshmallows and chocolate and stir until melted. 
  2. Stir in the coco crunchies, walnuts & apricots. 
  3. Let it cool slightly and add 1/2 cup of marshmallows.
  4. Press evenly into a lightly greased 20x20cm baking tray. Allow to set then slice. 

Optional: drizzle some extra chocolate over the bars. Enjoy!
