Seriously good French toast, the deliciousness of eggy bread with the added crunch of scrummy muesli equals the ultimate high protein breakfast!


1/3c milk

2 small eggs 

1t vanilla extract (swap out for half a scoop of vanilla protein powder to up the protein)

Pinch of cinnamon

Pinch of salt

1/4c Te Atatu Toasted original muesli

4 slices thick bread

1T butter


  1. Whisk the milk, eggs, vanilla (or protein powder if using), cinnamon and salt in a shallow bowl. 
  2. Spread the muesli evenly across a side plate.
  3. Lightly butter a frying pan and heat over a medium heat.
  4. Dip both sides of each slice of bread into the egg mixture then press each side into the muesli before cooking on the frying pan. Cook for 3-4 minutes each side until golden. Reduce the heat if the muesli starts to burn. Serve immediately with yoghurt, fresh fruit and a drizzle of maple syrup.
