This beautiful breakfast bake makes a perfect winter breakfast and is also a great low sugar breakfast option.

Serve it with plain yoghurt and you are good to go! 

Ingredients

1 cup Healthy Blend (you could also use the Original and Gluten Free Blends)

1/2 cup boiling water

1/2 cup Paleo Blend

1 cup of fresh or frozen blueberries (if using frozen do not defrost)

2 ripe bananas mashed 

6 prunes chopped up

1/4 cup of milk

Method

  1. Preheat the oven to 180 C
  2. Place the Healthy Blend in a bowl and cover in with the boiling water, allow to soak for 5-10minutes or until all the water has been absorbed.
  3. Add the remaining ingredients and place in an 15 x 22cm oven proof baking dish, 
  4. Bake for 45minutes
  5. Remove and cool slightly before serving with thick plain yoghurt and a drizzle of honey if you like.

Serves 4 and will keep in the fridge for up to 4 days.
