Ingredients 

2c gluten free flour

2t baking baking powder 

1/2t baking soda 

Pinch of salt

80g butter, room temperature 

2/3c sugar

2 eggs

2T milk

1t vanilla extract 

3 medium-large bananas (mashed)

1/2c Te Atatu Toasted gluten-free muesli +2T for topping

Method 

  1. Preheat your oven to 180°C and line a loaf pan with baking paper. 
  2. Sift the flour, baking powder, baking soda and salt into a medium bowl and mix to combine. 
  3. Cream the butter and sugar in a large bowl with an electric beater until pale and fluffy. 
  4. Continue to beat and add the eggs one at a time. Add the milk and vanilla then mix. Stir through the banana. 
  5. Add the dry ingredients to the large bowl and stir through until just mixed. Gently fold through the muesli. 
  6. Pour the mixture into the loaf pan and spread evenly. Sprinkle with the extra muesli. 
  7. Bake on a low rack in the oven for 50 minutes or until a skewer inserted comes out clean. 
  8. Allow to cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
