Here's a recipe for a healthy breakfast cookie, perfect for busy mornings or teenagers who need a low sugar breakfast but can't face eating a bowl of cereal. They are high fibre, high protein and low sugar, low salt so you know they are a healthy breakfast option. 

They also make the perfect healthy snack to have with a cuppa or put in kids lunchboxes.

Ingredients

1 cup Te Atatu Toasted healthy blend muesli

3 tablespoons almond meal

1.5 tablespoons chia seeds

2 tablespoons goji berries (raisins or low sugar dried cranberries work too)
2 tablespoons sugar free chocolate chips (optional)

Pinch of salt

1/2 banana, mashed

2 1/2 tablespoons almond butter* (peanut butter works too but ensure it is a wet mixture)

2 tablespoons maple syrup

2 tablespoons coconut oil, melted

1/2 teaspoons vanilla extract

Method

  1. Preheat the oven to 180C and line a baking tray with baking paper.
  2. Mix the dry ingredients in a large bowl and the wet ingredients in a medium bowl.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Use a cookie scoop or spoon to make even sized cookies and press down gently.
  5. Bake for 12-15 minutes, or until golden brown. Cool for 5 minutes on the tray the transfer to a cooling rack.

I have also made these replacing the almond butter with cashew nut butter and they were delicious!
