Paleo Cookies

I made these because I wanted a cookie. Not a sugary one that would give me a sugar spike, just something for when I'm a bit peckish in the afternoon, with decent fibre and protein, and actually satisfying. The Paleo Blend was my go-to for these delicious cookies.

Ingredients:

2 cups Te Atatū Toasted Paleo Blend Muesli

½ cup almond meal

¼ cup almond or cashew butter

2 tablespoons melted butter

2 tablespoons maple syrup (or your choice of sweetener)

1 egg

1 teaspoon cinnamon

1 teaspoon vanilla essence

½ teaspoon baking soda

 

Method:

1.       Heat oven to 180 degrees Celsius and line a tray with baking paper.

2.       In a food processor combine all ingredients to form a sticky dough.

3.       Use a tablespoon to place 30g portions onto a prepared tray.

4.       Flatten a little with the back of a spoon.

5.       Cook 10 – 12 mins till edges are golden.

6.       Cookies will be soft when you take them out of the oven, so let cool completely on tray and will firm up as they cool.

7.       Store in an airtight container.

 

Variations

You could add 2 tablespoons of goji berries or chocolate bits to the mixed dough.
