My sister made these gorgeous jars for a market she was helping me at. Not only do they taste amazing, they’re packed with fibre and protein, giving you slow-release energy to keep you feeling fuller for longer.
For 2 jars
Ingredients
1/3 Cup of Te Atatu Toasted Paleo Muesli
1/3 Cup of Te Atatu Toasted Original Blend
4 heaped tablespoons Greek yoghurt
4 tablespoons raspberries (fresh or frozen)
4 tablespoons blueberries (fresh or frozen)
1/2 Cup milk of your choice.
A swirl of runny honey
Method
1. Mix the two 1/3 cups of mueslis together.
2. Put 2 tablespoons of the mixed muesli in each jar.
3. Layer with 1 tablespoon of Greek yoghurt, 1 tablespoon of raspberries and 1 tablespoonful of blueberries.
4. Repeat the layering.
5. Pour 1/4 cup of milk into each jar.
6. Swirl honey over the top of the berries.
7. Seal and refrigerate overnight (minimum 6–8 hours).
These jars are perfect for on the run, not just for mornings, but also healthy and sustaining afternoon snacks for kids between activities. My sister said she even had one for dinner once!
Feel free to increase or decrease the volumes of muesli, fruit and yoghurt to suit your likes. My sister has a son who loves apple sauce on his breakfast, so she has saved his empty jars for breakfast, you can find the jar she uses here.
