As the warmer weather starts, it’s time to stop eating stodgy foods and look for lighter, healthier meals that will give you heaps of energy without weighing you down. Here are seven recipes using yummy Te Atatu Toasted cereal.
Pōke Bowl
This is the perfect summer lunch or dinner, and because you can vary the ingredients, you can eat it a few times a week without getting bored. Mix cooked brown rice with a wide range of vegetables and your favourite healthy protein – salmon works well.

Our gluten-free muesli is surprisingly good sprinkled on salads. It adds crunch and extra nutrition from the delicious seeds, grains and chickpeas in the muesli. Lightly toasting the muesli and adding tamari gives it an extra yummy savoury flavour and is so simple to do.

Breakfast in a Jar - Healthy Blend with Blueberries
You can make this fantastic breakfast the night before and store it in the fridge to save time on those crazy mornings. It’s also perfect if you need to take breakfast with you. Just add all the ingredients and shake well. If you like, you can add the milk in the morning just before you eat it or as you leave the house.

Broccoli Salad
This works well as a side dish at dinner, or you can add some protein such as chicken or a boiled egg to make a hearty, healthy lunch. The homemade dressing gives it a delicious flavour. Let the salad and the dressing marinate for at least an hour before you eat it.

Shelley from Santosha Health Coaching shared her favourite high-protein breakfast recipe using Te Atatu Toasted Paleo Muesli. She says most of us are under-eating protein. We need at least one gram for every kilogram of body weight, which means aiming for around 30g at breakfast.

This flavoursome mix of beetroot, carrot, fresh mint leaves, raisins and Te Atatu Toasted Gluten Free muesli is another great dish to eat with dinner or have for lunch. Add a delicious dressing made with pomegranate molasses, honey, balsamic vinegar, orange juice and olive oil and the whole family will come back for more!
